Owner and bartender
Simon Cauchon
Fifteen years behind bars on Grande Allée and Petit-Champlain, then the itch for somewhere smaller where he'd know the names. Simon opened Le Rossignol in 2018 in a former shoe shop, keeping the original floor and the oak counter he sanded himself.
His rule: no smoke, no sparkle, no flying shakers. A well-balanced cocktail, served fast, and music low enough to talk over. He makes his syrups on Sundays and his tonic on Mondays.

House rules
Four rules, kept since 2018
01
No smoke
No dry ice clouds, no flaming glasses. A cocktail is meant to be tasted, not filmed.
02
No glitter
Simple glassware, garnishes that serve a purpose and well-balanced recipes.
03
Served fast
Twenty-eight seats, one counter: you won't wait twenty minutes for a drink.
04
Music low enough
You should be able to hear each other talk. Even on vinyl nights, even on live music nights.
