When you walk in at peak hour, everything seems to flow effortlessly. In reality, the evening shift begins hours earlier, quietly, with a routine the whole team knows by heart.

What happens before opening

• Ingredient preparation: sliced citrus, fresh herbs, house-made syrups.
• Cleaning and checking equipment, taps and glassware.
• Ice and stock, so we are never caught off guard.
• The team meeting to go over new items and how the evening will run.

This preparation lets us stay available for you once the room is full. When everything is in place, we have time to chat, make recommendations and notice the guest who is waiting.
