The roastery

A neighbourhood café,
roasted under the same roof.

Twelve seats, a one-kilo roaster at the back of the room and an owner who really answers when you ask what's in the cup.

Owner and roaster

Frédérique Lauzon

Frédérique was a barista for eight years in Montreal before returning to Québec City with a one-kilo roaster and one idea: coffee you can drink black without wincing. The café carries her grandfather's first name — he took his very strong, in a chipped cup.

She roasts Tuesday mornings — you're welcome to come watch — and buys her green beans from two importers who name the farms. If you ask what's in the cup, be ready: she'll actually answer.

What doesn't change

Four habits,
since day one.

01

Coffee you can drink black

Beans roasted here in small batches, so a filter coffee goes down without sugar and without a wince.

02

Farms with names

Our green beans come from two importers who name every farm. Just ask: we know where your cup comes from.

03

Nobody rushes you

Twelve seats, outlets at every table and the right to stay all afternoon over a single coffee.

04

Fewer paper cups

Bring your own cup: $0.50 off every drink. And your 10th coffee is on us.
